Instructions

Stir in grated carrot and toasted pecans by hand.
Divide batter evenly among the 12 liners, filling each about two thirds full.
Bake 16 to 18 minutes, until a toothpick comes out clean. Cool in the pan 10 minutes, then move to a rack.
Beat cream cheese and softened butter until smooth. Add powdered erythritol and vanilla, then beat until fluffy.
