Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, browned and cooled
- 1/2 cup pure maple syrup (grade A dark)
- 1/3 cup brown sugar, packed
- 2 large eggs, room temperature
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 3/4 cup walnuts, toasted and chopped
- 1 cup unsalted butter, softened, for frosting
- 3 cups powdered sugar, for frosting
- 3 tbsp pure maple syrup, for frosting
- 1/4 cup old fashioned oats, for optional crumble
- 2 tbsp cold butter, cubed, for optional crumble
Instructions
Preheat oven to 350°F. Line a 12 cup muffin pan with paper liners.
Brown the 1/2 cup butter in a light pan until it smells nutty. Pour into a bowl and let it cool for 10 minutes.
Whisk flour, baking powder, baking soda, and salt in a medium bowl.
In a large bowl, whisk cooled brown butter, maple syrup, and brown sugar until smooth.
Add eggs one at a time, whisking well after each. Whisk in buttermilk and vanilla.
Fold the dry mix into the wet mix in two batches. Stop mixing once no dry flour shows.
Fold in the chopped toasted walnuts by hand.
Divide batter evenly among liners, filling each about two thirds full.
Bake 16 to 18 minutes, until a toothpick comes out clean. Cool in the pan 5 minutes, then move to a wire rack.
For the crumble, rub cold butter into oats with your fingers until it looks like coarse sand. Toast in a dry pan 3 minutes, stirring often. Cool fully.
For the frosting, beat softened butter until pale and fluffy, about 2 minutes.
Add powdered sugar in two batches, then beat in maple syrup until the frosting is smooth and holds a peak.
Pipe frosting high on fully cooled cupcakes. Sprinkle crumble on top if using.
Pro Tips
- • Use real maple syrup, not pancake syrup or maple extract, for true flavor.
- • Toast walnuts in a dry pan for 4 minutes before chopping. It makes them taste less bitter.
- • Let brown butter cool to room temperature before mixing, or it will melt the sugar too fast.
- • Frost only fully cooled cupcakes, or the buttercream will slide right off.

Final Thoughts
These maple walnut cupcakes bring real fall flavor without a long ingredient list. The maple frosting swirl makes them look bakery ready, and the crumble adds a nice crunch if you want it. Bake a batch this weekend and see how fast they disappear.
Frequently Asked Questions
Can I use maple extract instead of maple syrup?
You can, but the flavor will be flatter. Real maple syrup gives the crumb moisture and a deeper, less one note taste.
Do I have to toast the walnuts first?
Toasting is not required, but it removes raw bitterness and makes the nuts taste richer. I toast mine for 4 minutes in a dry pan.
Can I skip the crumble topping?
Yes, the crumble is optional. The cupcakes are still fully finished with just the maple frosting swirl on top.
How far ahead can I bake these cupcakes?
Bake the cupcakes up to 2 days ahead and store unfrosted at room temperature in a sealed container. Frost the day you plan to serve them.
